Recipe: 15 Minute Creamy Cheese Chicken

Have a chicken and some cheese and absolutely no plan for dinner? This meal pulls it all together in a few minutes with little prep. Add a soup, salad, biscuit, some roasted vegetables, even pan frying some vegetables lightly and you have yourself a great meal.

15 Minutes Creamy Cheese Chicken
Serves 2
  1. 1 lb chicken breasts
  2. olive oil
  3. salt and pepper
  4. 1 shallot, minced
  5. 3oz spreadable herb cheese or goat cheese
  6. 1/2 cup chicken broth
  7. 1 tbsp lemon juice
  8. 2 tbsp fresh herbs
  1. Season both sides of the chicken with salt and pepper.
  2. Put a small amount of olive oil in a skillet over medium-high heat until no longer pink in the center then remove to a plate and set aside.
  3. Turn heat down to medium then add a small amount more olive oil and shallots. Saute until shallots are slightly softened, about 1 minute
  4. Add herb cheese, chicken broth, and lemon juice. Stir until creamy then add in fresh herbs. Spoon sauce over cooked chicken then serve.
