Recipe: Banana Bread with Dried Cherries

Just a quick twist on banana bread in case you, like me, have a bunch of oats and dry fruit laying around and you seem to have a parade of brown bananas because you never seem to buy the right amount of them.

Banana Bread with Dried Cherries
Serves 10
  1. 1 1/2 cups all-purpose flour
  2. 1/4 cup rolled oats
  3. 2 teaspoons baking powder
  4. 1/2 teaspoon baking soda
  5. 1/2 teaspoon salt
  6. 1/3 cup buttermilk
  7. 1 tablespoon vegetable oil
  8. 1 tablespoon vanilla extract
  9. 2 large eggs
  10. 1/2 cup light brown sugar
  11. 1/4 cup granulated white sugar
  12. 1 cup smashed ripe bananas (about 3 bananas)
  13. 1 1/2 cup cranberries
  1. Preheat oven to 325˚F and grease loaf pan (or line with parchment).
  2. In a large bowl, using an electric mixer, beat eggs, light brown sugar and white sugar together until thick and pale, approximately 3-5 minutes. Mix in smashed banana and buttermilk mixture. Add in the oats, baking powder, baking soda, salt.
  3. To this add the buttermilk, oil, and vanilla.
  4. To this mix slowly add in the flour mixture, mixing until just combined, being sure not to over mix.
  5. Fold in cranberries and transfer batter to prepared loaf pan and bake for an hour.
