Want great banana muffins but you don’t want to spend a ton of time fussing with them? Look no further then this recipe! This recipe doubles easily, is pretty no fuss, is a one bowl recipe and makes great muffins to boot. They come out soft and moist and with tons of banana goodness!

Ingredients
- 1 cup sugar
- 1 stick of butter (8 tbsp)
- 4 overripe bananas
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups of flour
Instructions
- Cream the butter and sugar together in a large mixing bowl.
- Mush the bananas up with the back of a fork (or potato masher) and add them to the creamed mixture.
- To the bowl add the vanilla and eggs and stir until well mixed.
- Add the dry ingredients and beat by hand until you can see no more lumps of flour.
- Pour the batter into greased and lined muffin tins (or a loaf pan if you'd prefer.)
- Bake in a 350 degree oven for 15-20 minutes. These are done when the top is firm and golden brown.
