Recipe: Biscuits and Gravy

This is not the world’s most complicated recipe but it is probably a little more than I want to tackle on a week night. It’s a surprisingly delicious meal even though it’s not the most healthy either.

Biscuits and Gravy

Biscuits
  1. 2 cups all-purpose flour
  2. 1 tablespoon baking powder
  3. 1/2 teaspoon salt
  4. 1/2 cup shortening
  5. 3/4 cup milk
Gravy
  1. 450g ground turkey
  2. 25g butter
  3. 115g all-purpose flour
  4. 5g teaspoon salt
  5. 3g black pepper
  6. 700ml milk
  7. optional seasoning: cumin, paprika, hot sauce, sage, garlic
Instructions
  1. Preheat oven to 230°C
  2. In a large mixing bowl mix together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs.
  3. Pour milk into the mixture. Mix until a dough forms.
  4. Turn dough out onto a lightly floured surface and toss with flour until no longer sticky.
  5. Roll dough out into a 1/2 inch thick sheet and cut to desired shapes.
  6. Place biscuits and bake until golden brown, about 12-15 minutes.
  7. While the biscuits cook, make the gravy: Heat a large skillet and melt the butter.
  8. Crumble turkey into then skillet and cook over medium-high heat until browned.
  9. Stir in flour, salt and pepper, and any other seasoning then gradually stir in milk. Cook until mixture thickens, stirring constantly.
  10. Serve on split biscuits.
