Recipe: Black Bean and Sweet Potato Bowls

A delicious way to get sweet potatoes in to your mouth. This can be served over rice or just as is. You could probably mix in salad greens too if you wanted for a more salad feel if you wanted. This dish is a nice mix of sweet and spicy and the only real effort is baking the sweet potatoes which is pretty much set it and forget it making it a great weeknight meal or prep recipe.

Black Bean and Sweet Potato Bowls
Serves 4
  1. Sweet Potato Bake
  2. 1 large sweet potatoes, chopped into small cubes
  3. 1/2 tablespoon paprika
  4. 1/2 tablespoon smoked paprika
  5. 1 teaspoon ground cumin
  6. 1/4 teaspoon cayenne
  7. 1 tablespoon oil
  8. salt and pepper, to taste
  9. Black Bean Blows
  10. 2 cloves of garlic, minced
  11. 1 can black beans, drained and rinsed
  12. 1 teaspoon paprika
  13. 2 tomatoes, chopped
  14. 1/2 red onion, diced
  15. 1 green pepper, diced
  16. 1/2 cup corn
  17. 1 teaspoon cilantro, chopped
  18. 1 teaspoon olive oil
  19. Salt + pepper to taste
  1. Preheat an oven to 350°F, line a tray with parchment paper.
  2. In a bowl place all of the sweet potato ingredients and toss to coat, then place sweet potatoes on a singly layer of the lined tray and bake for 25-30 minutes until tender.
  3. Prepare the rest of the items in a single large bowl, stir in the sweet potatoes once finished.
  4. Optional: Top with salsa, sour cream, guacamole, lime, and/or cheese to finish.
