Recipe: Brie and Pear-Onion Chutney Sandwich

So I always think there shouldn’t really be recipes for sandwiches but sometimes you make a really cool sandwich and you just want everyone to know. So technically this is mostly a recipe for a delicious pear and onion chutney but I would suggest you put it together with these ingredients in to a sandwich and then also slather it on everything.

Ingredients
  1. 40g sugar
  2. 40ml cider vinegar
  3. 20ml water
  4. 1/8 tsp ground cumin
  5. 1/2 red onions, chopped
  6. 1/4 tsp grated ginger
  7. 2 pears, chopped finely
  8. 20g raisins
  9. 2 piece of very strong bread
  10. 2-3 1/4" thick wedges of brie
  11. a handful of arugula
Instructions
  1. Make the onion-pear chutney: Put the sugar, cider vinegar, water, cumin, red onions and ginger in a large saucepan and bring to the boil.
  2. Add the pears and raisins then simmer for 20 minutes until the pears are just cooked.
  3. Create your sandwich: Spread the chutney on both side of the bread, layer on brie and arugula and enjoy your creation.
Notes
  1. This makes enough chutney for about 4-6 sandwiches
