Recipe: Brownie Cookies

For the time in your life where you can’t figure out if you want a brownie or a cookie. Don’t lie to me, that’s been a moment in your life. Now you can have both with these soft, chewy brownie cookies! The recipe is basically like your standard brownie but it makes a slightly stiffer cookie form of itself, just be careful because these cookies expand slightly more than your average sugar cookie.

Brownie Cookies
Yields 20
  1. 1/2 cup unsalted butter
  2. 4 ounces unsweetened chocolate
  3. 1 cup brown sugar
  4. 2 tablespoons sugar
  5. 2 large eggs
  6. 1 teaspoon vanilla extract
  7. 1/2 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 1/2 cup unsweetened cocoa powder
  10. 1 cup flour
  11. 2/3 cup chocolate chips
  1. Melt butter and unsweetened chocolate together in the microwave in 30 second intervals, stirring between each.
  2. To the butter and chocolate add the sugars eggs, and vanilla.
  3. Whisk in baking soda, salt, and flour, until just combined then add the chocolate chips and stir.
  4. Place the mixture in the refrigerator for about 30 minutes and heat oven to 350°F (175°C).
  5. Once ready, scoop 1 tablespoon sized mounds and space evenly on baking sheets and bake for 11 to 12 minutes.
