Recipe: Bubble and Squeak

This recipe is an English-Irish one which is basically like a giant potato cake stuffed with vegetables and then pan fried. Mine had too many vegetables so it didn’t 100% stick together outside of the pan but you can always make sure it does by adding some flour or cheese to it if you want to present it or by adding less vegetables of course…

Bubble and Squeak
Serves 4
  1. 1 tablespoon butter
  2. 1/2 medium onion, finely diced
  3. 1/2 cup red peppers, cut small
  4. 1/2 cup shredded, cooked brussels sprouts
  5. 1/2 cup shredded, cooked cabbage
  6. 1/2 cup grated carrots
  7. 2 cups mashed potatoes
  8. Salt and pepper, to taste
  1. Gently heat the butter large frying pan or skillet over medium heat, and add the onion. Cook for five minutes, until the onion is softened.
  2. Turn up the heat to medium-high and add the rest of the vegetables but not the potatoes and cook about 5-8 minutes, until the vegetables start to color.
  3. Add the mashed potatoes to the skillet and stir until well combined then press down on the mixture and fry for 5-8 minutes, until the bottom is lightly browned and crisp.
  4. Using the lid of the pan, invert the pancake onto the lid, then slide back into the skillet to cook the other side for another 5-8 minutes.
