Recipe: Caramelized Onion and Goat Cheese Tarts

Using boxed puff pastry to pretty good effect, the hardest part of making these tarts is that you have to wait for the onions to caramelize.

Caramelized Onion and Goat Cheese Tart
Serves 4
  1. 15g butter
  2. 3 medium onion
  3. 1/4 tsp sugar
  4. 225g pack ready-rolled puff pastry
  5. 150g goat cheese
  6. 4 thyme sprigs
  1. Make the caramelized onions by heating butter in a large, deep frying pan.
  2. Add the onions, cover with a lid and cook for10 mins, until softened then add sugar and cook for 20 minutes until the onions have turned brown.
  3. Heat oven to 220C° and prep a baking sheet.
  4. Cut the pastry into 4 rectangles spread the goat cheese to cover almost up to the edges of the rectangle.
  5. Spoon the onions into the middle and then drizzle oil over the tops of the tarts and bake for 15-20 minutes until the pastry is golden brown.
  6. For the onions: Makes 600g, which is 3 batches. Prep time 5 mins, cook time 30 mins. Melt the Divide into 3 batches to make the recipes, right. Will keep in the fridge for up to 5 days, or freeze for up to 1 month.
  1. You can use cream cheese instead of goat cheese if you prefer.
