Recipe: Cheddar and Chive Muffins

These muffins goes really well with simple soup or just as a snack on their own. They come out light and fluffy despite having a lot of cheese in them and he taste is exactly how’d you expect it. This is also a one bowl wonder so it takes all of 10 minutes to come together and makes a full dozen muffins.

Ingredients
  1. 185g flour
  2. 12g sugar
  3. 10g baking powder
  4. 1/2 teaspoon salt
  5. 150g cheddar cheese, shredded
  6. 3 tablespoons chives, chopped
  7. 1 egg
  8. 240ml milk
  9. 30g butter, melted
Instructions
  1. Preheat oven to 190°C and line a muffin tin with cupcake liners.
  2. In a large bowl, combine all ingredients together until just combined.
  3. Divide the batter into the muffin tins evenly.
  4. Bake until golden brown on the tops, about 20-25 minutes.
