Recipe: Cheese Straws (Cheez Its)

When I made these I thought that perhaps they would be somewhat like breadsticks but they’re not at all. Honestly these are glorified Cheez Its. I have no complaints about that but next time I think I’ll make them in more of a cracker shape as the straw shape is a little strange!

Cheese Straws
  1. 6 ounces grated extra-sharp Cheddar cheese
  2. 4 tablespoons unsalted butter
  3. 3/4 cup flour
  4. 1/2 teaspoon kosher salt
  5. 1/2 teaspoon paprika
  6. 1 tablespoon cream
  1. In a stand mixer, processor, or if you have good muscles by hand, combine the cheese, butter, flour, salt and paprika until crumbly. Add the cream and mix or stir until it forms a dough ball.
  2. Roll the dough into an long rectangle that is between 1/4 and 1/8-inch thick then cut the dough into thin strips (you can lightly wet the knife if it sticks to the dough).
  3. Gently transfer the strips to an ungreased cookie sheet, leaving some space between them (they puff) and bake at 350 degrees for 12 to 15 minutes or until they begin to brow
  1. Don't eat them until they're completely cooled because the texture changes. Also be warned! These are additively delicious.
  2. If you're making crackers and/or cracker shapes they will likely cook a lot faster probably 8-9 minutes so I wouldn't let them sit the whole time.
