A super simple way to make broccoli disappear in a matter of minutes. Creamy, rich, not all that good for you but delicious. I actually would use much less cheese and then taste and add as much as you need because I dumped it all in the first time and it was actually too cheesy I ended up putting in some stock to thin out the flavor.

Cheesy Broccoli Soup

Ingredients
- 1 whole onion
- 1 stick butter
- 1/3 cup flour
- 4 cups vegetable stock
- 2 cups half-and-half (or milk or cream, your choice)
- 4 heads broccoli (or 1 big bag of frozen broccoli, thawed)
- 1.5 to 3 cups cheese (any type, I used cheddar and pepper jack)
- 1 tsp nutmeg
- salt and pepper to taste
Instructions
- Melt butter in a pot over medium heat, then add the onions. Cook the onions for 3 to 4 minutes, then sprinkle the flour over the top. Once combined pour in stock and half-and-half. Add nutmeg, then add broccoli, some salt and pepper
- Cover and reduce heat to low. Simmer for 20 to 30 minutes, or until the broccoli is tender. Stir in cheese and allow to melt.
