Recipe: Chicken Afritada

This is a really simple dish that comes out pretty good. If you’re looking for a twist on chicken meals this one is a good place to start. I’m not usually a fan of sweet plus meat but the pineapple isn’t too clawing in this dish.

Ingredients
  1. 450g chicken breast, chopped
  2. 3-4 small potatoes, peeled and cubed
  3. 1 carrot, chopped
  4. 1 yellow bell pepper, sliced into strips
  5. 3 cloves garlic, chopped
  6. 1 red onion, chopped
  7. 400g can tomato puree
  8. 225g can pineapple chunks , reserve syrup, drained
  9. 2 tablespoons soy sauce
  10. 1/2 cup green peas
  11. salt and pepper, to taste
Instructions
  1. In a big pan over medium heat, add a small amount of oil then the onion and garlic and cook for 1-2 minutes.
  2. Add chicken and brown it slightly.
  3. Add the potatoes, yellow bell pepper, carrots, and pineapple chunks and cook for 2-3 minutes.
  4. Add the tomato puree, pineapple syrup, soy sauce and bring to a boil, cover and simmer for about 20 minutes.
  5. Turn the heat off, add the green peas, season with salt and pepper and cook and stir until the peas are cooked through.
