Recipe: Chicken and Creamy Vegtables

This is something like a traditional Chicken with Creamy Mushrooms except that I made it up and threw in a lot of things. It actually tasted quite nice, like a sort of pot pie without the pie part. Also this recipe is really hap-hazard so follow at your own risk (it was created to use up what was in the fridge).

Chicken and Creamy Vegetables
Serves 4
  1. 1/2 onion
  2. 4 large carrots
  3. 1/2 package of mushrooms (about 4oz)
  4. 1 bell pepper
  5. 1/4 cup heavy cream
  6. 1/2 cup chicken stock
  7. 3 tbsp flour
  8. 2 tsp paprika
  9. 1 tsp chives
  10. 1 tsp garlic
  11. salt and pepper
  12. 2 tbsp olive oil
  13. 1 chicken breast
  1. Chop all the vegetables in to 1 inch pieces or smaller and saute in a large pan with half of the olive oil. Let cook over medium for about 5 minutes or until onions are clear.
  2. Add cream, stock, and seasonings and turn heat up until boiling then lower to a simmer for about 10 minutes until vegetable are tender.
  3. Add flour to thicken as desired then remove from pan and set aside.
  4. Chop the chicken into slices or cubes (your preference) and grill in the same pan seasoning with salt and pepper liberally. Cook until there's no more pink - about 5 minutes.
  5. Serve with the sauce on the bottom and chicken over the top on rice or with some nice crusty bread.
  6. Remember to taste and adjust seasoning to taste. Also this could easily turn vegetarian if you're too lazy to make the chicken. I think I would have preferred it with bread but all we had so rice so that's all.Sorry about the picture quality I took it with my phone.
