Recipe: Chicken and Spinach Rice Bake

If you have leftover chicken meat from roasting a chicken and leftover rice this is the perfect easy dish to use those up with. You just mix it all up in a bowl and throw it in a pan and then you have a really nice meal all in one.

One pan meal. Can technically be mixed right in the pan if you're very careful even!

Ingredients
  1. 2 cups cooked rice
  2. 1/2 package frozen spinach, thawed
  3. 1/2 cup shredded cheese
  4. 1/2 cup shredded cooked chicken
  5. 1/2 cup milk
  6. seasonings to taste: salt, pepper, onion powder, cumin, fennel, paprika, tabasco/chili sauce
Instructions
  1. Heat oven to 180°C.
  2. In a mixing bowl all ingredients.
  3. Pour mixture in to an casserole dish and cover with foil.
  4. Bake dish 20-30 minutes until cheese has fully bubbled and melted.
