Recipe: Chicken Katsu

There is nothing as delicious as fried chicken and chicken katsu presents it in a perfectly crisp way. With a good bulldog or tonkatsu sauce there is almost nothing better.

Chicken Katsu
Serves 3
  1. 3 thin pounded chicken breasts
  2. 2 tablespoons sake
  3. salt, pepper
  4. 1 cup flour
  5. 2 eggs
  6. 1 cup panko
  7. frying oil (I used olive oil)
  8. Tonkatsu Sauce (optional)
  1. Put the chicken in a bowl and add sake, salt, and pepper. Set aside for 15 minutes.
  2. Set up breading station with flour, egg, and panko in three separate bowls.
  3. Follow normal breading procedures: flour the chicken, dip them in the egg, and then coat the chicken in panko.
  4. Heat the oil in a deep skillet, when thermometer reads 350°F place a piece of chicken in the oil and let fry for about 3 minutes on each side then transfer to a rack to dry. Repeat until all chicken is cooked.
