Recipe: Chicken Nachos

I love nachos. I don’t think I’ve perfected the nacho making technique and actually wish I had halved this recipe (it made way too many nachos and if you’ve ever just had a giant plate of nachos…you just keep going) but this made for a delicious and satisfying nacho-like experience with minimal time or effort.

Chicken Nachos
Serves 4
  1. 2 cups of cooked chicken, shredded
  2. 1/2 onion, diced
  3. 1/2 green pepper, diced
  4. 2 medium tomatoes, diced
  5. 1/8 cup hot sauce of your choice
  6. 1/4 BBQ sauce
  7. 13 oz. bag tortilla chips
  8. 2 cups shredded cheese
  1. Preheat oven to 400°F and cover a baking sheet with tin foil and coat well with cooking spray.
  2. Place the vegetables and chicken in a bowl and coat with the hot sauce and BBQ sauce.
  3. Place the tortilla chips in a single layer on the baking sheet, top with chicken and vegetable mixture and then top with cheese.
  4. Bake for 10-15 minutes or until cheese is melted.
