Recipe: Chicken Teriyaki

This delicious take out favorite is a one pot easy to make, even easier to eat dish. You can use bagged vegetables if you want and really any vegetables and protein in it but fresh vegetables make the dish pop even more.

Chicken Teriyaki
Serves 4
  1. 1 tablespoon olive oil
  2. 2 chicken breasts, cubed
  3. 2 cloves garlic, minced
  4. 1 tablespoon ginger
  5. 2 cups + 1/4 cup water
  6. 1 cup white rice, rinsed
  7. 1/2 cup soy sauce
  8. 1 tablespoon rice vinegar
  9. 1/4 cup honey
  10. 2-3 tablespoons Sriracha
  11. 1 tablespoon cornstarch
  12. 1 cup broccoli, cut small
  13. 1 cup carrots, diced
  14. 1 red bell pepper, diced
  15. 1 onion, diced
  16. salt and pepper, to taste
  1. In a large pot over medium heat place the chicken and season with salt and pepper, cook about halfway through, 6-8 minutes.
  2. To the chicken add the vegetables, garlic and ginger.
  3. Cook until the vegetables start to soften and the onion becomes clear then add the soy sauce, rice vinegar, honey, and Sriracha.
  4. Combine 1/4 cup of water with the cornstarch and mix until not lumpy then add to the pot and cook until it thickens, about 3-4 minutes.
  5. Serve on a bed of rice.
