Recipe: Chicken with Creamy Paprika Sauce

This is not a spicy sauce but it has a nice creamy, cool flavor to it and since it comes together in very little time makes a pretty nice weekday meal if you feel up to spending a little time in kitchen. It also tastes better the next day.

Ingredients
  1. 2 tbsp olive oil
  2. 1 lb chicken breast, cut into 1" cubes
  3. 1 tbsp flour
  4. 2 cloves garlic, minced
  5. 1 onion, chopped
  6. 8 ounces mushrooms, diced
  7. 1/2 zucchini, diced
  8. 1 tbsp paprika
  9. 120ml chicken stock
  10. 60g sour cream
  11. salt and pepper, to taste
Instructions
  1. Season the chicken pieces salt and pepper and then roll then in the flour.
  2. Heat oil in a large saucepan over medium heat and add the chicken to the pan and cook for 2-3 minutes on each side until brown then remove the chicken from the pan.
  3. If needed, add a bit more oil then the paprika, garlic, onion, and vegetables and cook until they soften.
  4. Add the chicken back to the pan along with the stock and allow to simmer until the sauce starts to thicken and the chicken is cooked through.
  5. Turn the heat off, stir in the sour cream, and season to taste.
Notes
  1. You can add red peppers, tomatoes, or other vegetables to bulk up the dish if you like.
  2. Serve over pasta, rice, or noodles.
