Recipe: Chickpea Tikka Masala

An even less labor intensive version of tikka masala that relies on mostly tinned ingredients so it can be thrown together both quickly and without much work.

Ingredients
  1. 1 large onion peeled and diced
  2. 4 garlic cloves peeled and finely minced
  3. 1 tablespoon garam masala
  4. 1 teaspoon ginger
  5. 1 jalapeno, seeds removed and minced
  6. 2 cans, drained
  7. 2 cans diced tomatoes
  8. 250ml coconut milk
  9. olive oil
  10. salt, pepper
Instructions
  1. Heat some olive oil in a large saucepan over medium heat.
  2. Add the diced onions and garlic and saute until they begin to brown, about 6-8 minutes.
  3. Stir in the garam masala, ginger, and jalapeno and cook for a minute until fragrant.
  4. Add the chickpeas and diced tomatoes, bring to a boil then lower the heat and simmer for 15 minutes.
  5. Stir in the coconut milk and simmer for 5 more minutes.
  6. Serve hot with naan, roti, or rice.
