Recipe: Chili Mac

This is a pretty simple good and it’s a good one that is not photogenic but I’ll probably make it again in the future. I want it to be more “saucey” in the future too so I might add chicken broth to the recipe to get it a more sauce-like texture. It’s also a really good base for adding your own flavors or vegetables you have on hand to bulk it up.

Ingredients
  1. 1 pound ground meat
  2. 1 tbsp olive oil
  3. 1 onion, chopped
  4. 1 tbsp garlic, minced
  5. 8 ounces tomato paste
  6. 15 oz diced tomatoes
  7. 2 cup vegetables, diced
  8. 250-300g pasta, cooked and drained
  9. 1/4 cup cheddar, shredded
  10. 2 tbsp yellow mustard
  11. salt and pepper, to taste
Instructions
  1. In a large saucepan on medium heat cook the onions until translucent.
  2. To the onions add the vegetables, ground meat and garlic and cook mixture until the meat is browned.
  3. To the pan add tomato paste, diced tomatoes, and cooked pasta then stir until heated through.
  4. Stir in mustard, cheese, other spices, and salt and pepper to taste.
