Recipe: Chocolate Babka

In case you’re unfamiliar babka is a sweet, yeasted cake that looks quite like a bread. It’s rolled and twisted so you might get a cinnamon roll vibe from it but it’s also a delicious food with a look that is pretty much guaranteed to impress with very little effort. This one is chocolate and chopped almonds but you can fill them with a near infinite combination of things for your own fun twist.

  1. 175ml milk, warmed
  2. 4g active dry yeast
  3. 100g sugar
  4. 1 egg
  5. 1 egg yolk
  6. 4g vanilla extract
  7. 250g flour
  8. 3g salt
  9. 75g butter, cut into small pieces
  1. 200g semisweet or dark chocolate, chips or chopped bar
  2. 15g ground cinnamon
  3. 65g almonds, chopped fine
  4. 65g sugar
  5. 55g unsalted butter, melted
  1. In a small bowl mix together the milk, yeast, and sugar and let sit for 5-10 minutes until foamy.
  2. In a large mixing bowl mix together the sugar, vanilla, eggs, and yolk.
  3. To the wet mixture add flour and salt and butter and mix until a soft, smooth dough forms. The dough will be sticky and wet.
  4. Turn dough out onto a lightly floured surface, and knead until smooth. Place the dough back in the bowl, cover with towel and set aside for an hour.
  5. While rising, make the filling by mixing together chocolate, butter, sugar, walnuts, and cinnamon.
  6. After the dough has risen: Pre-heat oven to 175°C and generously butter a loaf pan.
  7. Punch the dough down and then on a floured surface, roll dough out until it is about 1/8 inch thick.
  8. Crumble the filling evenly over dough, leaving a 1/4 inch border then roll the dough up tightly like a jelly roll and pinch ends together to seal.
  9. Take the roll and twist it 5 times, then fold the roll in half and roll it 2 or 3 more times.
  10. Place the roll into prepared baking pan, brush the top of Babka with egg wash and let stand for 20-30 minutes.
  11. Bake babkas until golden, about 35 minutes.
