Recipe: Chocolate Cheesecake Mousse

This is a great last-minute dessert as it comes together in about 5 minutes but is so rich and decadent it feels like it must have taken ages. The texture is a mix between cheesecake filling, whipped cream and pudding. It makes enough for a crowd but can easily be trimmed down for a single pot (though I would make it with a handmixer if it was just for one person).

Chocolate Cheesecake Mousse
Serves 4
  1. 1 cup heavy whipping cream
  2. 8 ounces cream cheese, softened
  3. 3 ounces semi-sweet chocolate squares
  4. 1/2 teaspoon vanilla
  5. 1 cup powdered sugar
  6. fruit for garnish, if desired
  1. Melt chocolate in the microwave.
  2. Add the cold whipping cream to the bowl of a stand mixer fitted with the whisk attachment. Whisk on high speed until the cream holds a stiff peak. Add the softened cream cheese and beat on medium speed until combined and smooth. Gradually pour in the melted chocolate followed by the vanilla. Finally, add the powdered sugar until it all comes together.
  3. Spoon the mixture into 6-ounce ramekins or other small dessert vessels. Top with raspberries, blueberries or other small fruit.
  4. Refrigerate until set, about 2 hours. Serve chilled.
