Recipe: Chocolate Chip Cookies

This is my go to chocolate chip cookie recipe. It’s no nonsense and they cookies come out light and fluffy with just a little bit of chew to them. Best enjoyed while they’re still a bit warm (you can pop them in the microwave for 10 seconds the next day to get that just out of the oven feel!)

Chocolate Chip Cookies
Yields 12
  1. 2 1/2 cups flour
  2. 1 tsp baking soda
  3. 1 cup butter
  4. 1 cup brown sugar
  5. 1/2 cup sugar
  6. 2 eggs
  7. 1 tsp vanilla
  8. 12 oz good quality chocolate chips
  1. Cream together the butter and sugars until fluffy.
  2. Add the eggs to the creamed mixture and beat until combined.
  3. Add in the flour, baking soda, and vanilla and mix gently until no lumps appear.
  4. Mix in the chocolate chips by hand, do not overbeat the mixture.
  5. Spoon in to 1" balls spaced at least 2" apart on a baking sheet and bake at 350 degrees for 12-15 minutes
