Recipe: Chocolate Peanut Butter Cake

I took terrible pictures of this cake but don’t judge it because of that. This is a very solid cake that I made with a very strange assortment of almost bakewear when we first came to Tallinn so it should pretty much prove that it’s an easy cake with that wonderful chocolate and peanut butter combo.

Chocolate Peanut Butter Cake
Serves 12
  1. Ganache
  2. 200g chocolate
  3. 200ml heavy cream
  4. Cake
  5. 115g flour
  6. 175g sugar
  7. 40g cocoa powder
  8. 3/4 tsp baking powder
  9. 3/4 tsp baking soda
  10. 1 egg
  11. 125ml milk
  12. 65ml vegetable oil
  13. 1 tsp vanilla extract
  14. 175ml boiling water
  1. 250g smooth peanut butter
  1. Preheat oven to 175°C and grease a 9x9 baking tin.
  2. Make the ganache by heating the cream in in a double boiler over the stove until very warm, then add the chocolate until melted and creamy.
  3. Cool the ganache in the fridge while preparing the cake.
  4. Place all of the cake ingredients, except the boiling water, into a large mixing bowl. Using a wooden spoon, or electric whisk, beat the mixture until smooth and well combined.
  5. Add the boiling water a small amount at a time and mix until smooth.
  6. Pour the batter in to the pan and then bake for about 35-40 minutes.
  7. Let cake cool for 10 minutes then spread peanut butter on top and chill for 30 minutes until firm then frost with the ganache.
