Recipe: Corn and Zucchini Salad with Feta

I get so sick of green salad and I’m always looking for salad substitutes that can be thrown together in a few minutes or even better, made ahead of time and this fits the bills perfectly.

Ingredients
  1. 400g corn, canned or fresh
  2. 1 small onion, diced
  3. 1/2 red pepper, diced
  4. 1 large zucchini, diced large
  5. 80 ml oil
  6. 100-150g feta, crumbled
  7. to taste: salt, pepper
Instructions
  1. In a dutch oven heat oil over high heat.
  2. Add corn, onion, pepper, and zucchini. Cook for 5-10 minutes with minimal stirring.
  3. Cool completely then season with salt and pepper and top with feta.
