Recipe: Cornbread

A simple staple that goes with all sorts of foods, this cornbread like most others, whips up in about 5 minutes of work and tastes moist and fluffy and delicious. Perfect with chili, soups, stews, or even as a quick breakfast with cream or jam.

Serves 9
  1. 1/3 cup butter (76 grams), softened
  2. 1/2 cup (64 grams) sugar
  3. 2 eggs
  4. 2/3 cup + 2 tablespoons (190 ml) milk
  5. 1 1/8 cup (144 grams) flour
  6. 1/2 cup (75 grams) cornmeal
  7. 2 1/4 teaspoons (11 grams) baking powder
  8. 1/2 teaspoon (5 grams) salt
  1. Preheat oven to 400°.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add to the sugar and butter the eggs, milk, flour, cornmeal, baking powder and salt and mix until combined.
  4. Pour into a greased 9x9" baking pan and bake 20-25 minutes or until a toothpick inserted in center comes out clean.
