Recipe: Creamy Orzo with Roasted Vegetables

I absolutely love the texture of this creamy orzo with roasted vegetables. It’s got just enough cheese to produce that perfect soft, gooey mouthfeel of mac and cheese but it has enough vegetables to keep the flavor smokey and not just slip you in to a full on carb coma after eating it. It comes together in just a few minutes and there’s no second pan of sauce to wash so it makes a good weeknight meal.

Ingredients
  1. 400ml vegetable broth
  2. 250g orzo
  3. 50g cheddar, grated
  4. 150g roasted vegetables
  5. salt and pepper and Parmesan cheese, to taste
Instructions
  1. Add broth to a medium size pot and bring to a boil then add orzo.
  2. Cook pasta for 7-10 minutes until liquid is absorbed and pasta is tender.
  3. When pasta is done remove the lid and stir in the cheese and vegetables.
  4. Season to taste and serve piping hot.
Notes
  1. I roasted red pepper, mushrooms, onions, and zucchini and added some frozen spinach at the end but you can pretty much add whatever you like.
