Recipe: Creamy White Beans with Mushrooms

This simple dish comes together in a few minutes. It can be a main by adding some bread or rice or just a side dish during a bigger dinner with meat, salad, or soup. It actually contains no cream but rather the beans make their own cream like sauce. You can add a little cheese to top if you want it extra decadent.

Creamy White Beans with Mushrooms
Serves 4
  1. 3 tablespoons olive oil
  2. 4 cloves garlic, sliced
  3. 8 oz mushrooms, finely chopped
  4. 1 large sprig fresh thyme
  5. 1/2 teaspoon red pepper flakes
  6. 1 15-ounce cans cannelini beans, rinsed and drained
  7. 1/4 c chicken stock
  8. seasoning: rosemary, marjoram, salt, pepper
  1. Heat the olive oil in a large skillet over medium heat. When the oil is hot, add the mushrooms, garlic, red pepper flakes and thyme and heat, stirring often, until the garlic is light brown, 2-4 minutes.
  2. Add the white beans. Cook, stirring once or twice, 2 minutes. Add just enough stock to barely cover the beans. Simmer, stirring occasionally, until the beans are tender and creamy, with just a little liquid left in the pan.
  3. Adjust seasoning to taste, add some cheese if desired.
