Recipe: Crockpot Chicken Mole

I’ve actually never had a mole before this so I’m having trouble judging if this is actually close to what it’s supposed to taste like or not but it was delicious! Especially after it sat for an extra 2 days in the fridge where the flavors had time to mingle. While I loved the nutty taste I’m not sure if the raisins were doing their thing for me so next time I might leave them out but this is now a new staple in the house.

Crockpot Chicken Mole
Serves 6
  1. 1 lb chicken, cubed (I used thigh meat)
  2. 20oz canned chopped
  3. 1 onion, chopped
  4. 2 tbsp taco spice (here)
  5. 1/2 cup sliced almonds
  6. 1/4 cup raisins
  7. 3 oz dark chocolate
  8. 1/2 tsp ground cinnamon
  1. Place the chicken to the bottom of the slow cooker.
  2. Over the chicken put the puree tomatoes, onion, spices, almonds, raisins, chocolate, and cinnamon.
  3. Cook on high for 4 hours or on low for 6 to 8 hours.
  4. When ready to serve taste and adjust with seasoning.
