Recipe: Crockpot Tamale Pie

Crockpots. Why are they so great? Sundays are perfect for crockpot meals but they don’t require a lot of attention or time. They bubble on in the background while you go about your cleaning, laundry, errands, or (my personal favorite) video gaming.

Crockpot Tamale Pie
  1. 1 medium onion chopped
  2. 1 large bell pepper chopped
  3. 1 can black beans
  4. 2 cups frozen corn kernels
  5. 1/2 7oz can diced green chilies
  6. 1 cup vegetable broth
  7. 1/2 cup tomato sauce
  1. 1 cup cornmeal
  2. 1 /2 cup flour
  3. 2 tsp baking powder
  4. 2 tsp apple cider vinegar
  5. 1 /2 tsp salt
  6. 1 /2 tsp pepper
  7. 1 cup vegetable broth
  8. 2 Tbs oil
  9. 1/ 2 7oz can diced green chilies
  1. In a 5 quart crockpot mix onion, bell pepper, jalapeno, black beans, corn, half can of diced green chilies, 1 cup veggie broth, and tomato sauce.
  2. Cook on low for 6 hours or high for 3 hours (until bubbling and hot.)
  3. For cornmeal topping: In a bowl mix cornmeal, baking powder, salt and pepper. Add 1 cup vegetable broth, the other half of the chilies, oil and apple cider vinegar.
  4. Spread cornmeal mixture evenly over the filling in the crockpot after it's finish cooking.
  5. Place a clean towel across the top of the crockery under the lid to absorb the moisture created from the cooking process.
  6. Cook for another hour until the top has risen and brown around the edges.
