Recipe: Crockpot Vindaloo

Easy recipe for crockpot vindaloo is both delicious and low effort it comes out almost better than the original. You can also use less expensive cuts of meat like thighs in this for a really cost effective dinner.

Ingredients
  1. 5 garlic cloves, minced
  2. 3 tablespoons fresh ginger
  3. 1 1/2 tablespoon curry powder
  4. 2 tablespoon ground cumin
  5. 1/2 teaspoon ground cardamom
  6. 1/2 teaspoon ground cloves
  7. 1/2 teaspoon ground cayenne pepper
  8. 2 tablespoon mustard seeds
  9. 2 teaspoons cinnamon
  10. 1 tablespoon vinegar
  11. 4 tablespoons olive oil
  12. 2 teaspoons brown sugar
  13. 2 cup tomato sauce
  14. 2 small onions, chopped
  15. 2-3 boneless skinless chicken breasts (or 3-4 thighs)
Instructions
  1. Mix all the spices together in the bottom of the crockpot then add the vinegar, olive oil, brown sugar and tomato sauce, stirring to mix.
  2. Add the onions and whole chicken pieces. Set the crockpot on low for 5 hours and walk away.
