Recipe: Cucumber Bites

Impress guests with this 5 minute recipe that is also healthier than average, bite sized, handheld, and cheap! It’s gluten free and vegetarian also and can be made vegan with vegan cream cheese substitutes (like some soft nut cheeses out there which taste pretty good). The best part of these bites is that they can be made ahead of time and pulled out just before serving.

Cucumber Bites
Yields 40
Bite sized appetizers made of vegetables and cheese, the perfect combo.
  1. 2 large cucumbers, sliced in to rounds
  2. 1 pint cherry or grape tomatoes, quartered
  3. 220g cream cheese, at room temperature
  4. 150 g Greek yogurt
  5. 3 tbsp fresh dill, minced
  6. 1/2 tsp each: salt, pepper, garlic, dried parsley
  1. In a bowl, combine cream cheese, yogurt, dill and seasonings and mix completely.
  2. Fill a piping bag or ziplock with the mixture.
  3. Pipe the cream cheese mixture onto the cucumber rounds and top with a tomato.
  1. You can skip the piping bag and just spoon it on if you want also depending how fancy you want to be.
