Recipe: Dal with Mixed Vegetables

Despite being kind of super special ugly, this is actually a really delicious dish and a way to spice up your life if just dal sounds like a drag to you. I used just one type of dal but the original used a blend which honestly is probably better.

Dal with Mixed Vegetables
Serves 4
  1. 3/4 cup toor dal (yellow lentils)
  2. 1 onion, diced
  3. 3 cloves garlic, chopped finely
  4. 1 green chili, diced
  5. 1 inch ginger, grated
  6. 1/2 teaspoon turmeric
  7. 1/2 teaspoon coriander
  8. 1 teaspoon cumin
  9. 1 teaspoon chili powder
  10. 1 teaspoon garam masala
  11. 3 carrots, diced
  12. 1/2 cup green peas
  13. salt and pepper, to taste
  14. vegetable oil
  1. Cook the dal according to directions.
  2. Meanwhile in a non-stick pan add all the chopped vegetables and spices and saute it for about 5 minutes until soft.
  3. To that add the cooked dal and a small amount of water for desired consistency, season to taste and bring it to boil.
