Recipe: Double Bean Chili

Double Bean Chili for double your beans! This is just a very nice chili that comes together in under 30 minutes. You can bulk this up to a meal with cornbread or adding avocados but it does already have a lot of vegetables and beans in it which makes it a pretty substantial food as is.

Ingredients
  1. 1 tsp oil
  2. 1 onion, chopped
  3. 4 cloves of garlic, finely chopped
  4. 1 bell pepper, chopped
  5. 1 tsp cumin
  6. 1 tsp oregano
  7. 1/2 tsp ancho chili powder
  8. 1/2 tsp or more cayenne
  9. 1/2 tsp black pepper
  10. 1 lime, squeezed
  11. 2 large tomatoes, chopped small
  12. 3 to 4 tbsp tomato paste
  13. 15 oz can black beans, drained
  14. 15 oz can white beans, drained
  15. 1 1/2 cup vegetable broth
  16. salt and pepper, to taste
Instructions
  1. Heat oil in a skillet over medium heat. Add onion and garlic and cook until onions are clear, about 4-5 minutes.
  2. Add any other vegetables and all the spices and cook for 3-4 minutes.
  3. Add lime juice, tomato, tomato paste, beans, salt, and broth.
  4. Mix, cover, and cook for about 25-30 minutes.
Notes
  1. Add easily more vegetables if you like. My suggestions would be corn or any variety of squash (zucchini, butternut, pumpkin, etc.).
