Recipe: Dutch Oven Potato Hash

I made this hash in a dutch oven but it’s probably be better off in a skillet due to surface area issues. I had to cook it a bit longer but it was worth the wait. Though mine came out pretty ugly this was a delicious hearty breakfast that only took a couple minutes to come together.

Dutch Oven Potato Hash

Ingredients
  1. 3 large russet potatoes, chopped in 1" pieces
  2. 1/2 onion, chopped finely
  3. 1 cup asparagus
  4. 2 teaspoons paprika
  5. 1 tablespoon cayenne
  6. 1 teaspoon each: turmeric, garlic, rosemary, cumin
  7. salt and pepper to taste
  8. 2 tablespoons oil
  9. 4 eggs
  10. toppings: sour cream, avocado, salsa, ketchup, hot sauce, etc.
Instructions
  1. In a dutch oven or skillet add all of the ingredients except the eggs and toppings and toss to coat with oil.
  2. Place the cooking vessel in a 400 degree oven and cook for about 25-30 minutes. At the 25 minute mark take eggs and crack them oven the hash and cook until eggs are no longer runny, about 10 minutes.
  3. Top with delicious toppings.
