Recipe: Eton Mess

If you want to impress people but put as little effort in to it as possible, make Eton Mess. A classic British trifle style dessert it’s a simple layering of a few key ingredients that can easily be purchased from the store. Like icebox cakes it takes a mere five minutes to make something delicious. Of course you can make your own curd and meringues if you’re feeling up to the task but the shortcut version tastes just as good.

Ingredients
  1. Lemon Curd
  2. Meringue
  3. Whipping Cream (300ml will make enough for 4-6 large servings)
Instructions
  1. Whip the cream until it holds its shape (you can add some sugar if you like).
  2. Build your eton mess by taking a small bowl or cup and layering cream, small pieces or broken up pieces of meringue, then curd to top.
  3. Layer until the glass is full and top with a healthy dollop of whipped cream.
