Recipe: Farmer’s Pie

Most people are familiar with Sheppard’s Pie but not Farmer’s Pie which is basically just the vegetarian version of it. This one combines many types of vegetables to give you a nice mouth feel to the dish while keeping the flavors lively and interesting. This is the perfect dish to serve when friends come over because it’s warm and homey and it makes a lot with very little effort.

Farmer's Pie
Serves 8
  1. 4 russet potatoes
  2. 1/2 cup milk
  3. 1/2 cup parmesan
  4. 2 eggs
  5. 1 large onion, chopped
  6. 3 garlic cloves, chopped
  7. 2 zucchini, chopped
  8. 1 cup corn
  9. 2 carrots, chopped
  10. 1 cup green peas
  11. 1 tsp dried thyme
  12. 2 tbsp Worcestershire sauce
  13. 2 tbsp ketchup
  14. 1 tbsp olive oil
  15. salt and pepper
  1. Boil potatoes in salted water.
  2. In a large skillet heat the olive oil and saute chopped onions for 3-4 minutes. Then add garlic, zucchini, corn, carrot, and peas. Add a pinch of salt and cook for 6-7 minutes until veggies are just tender
  3. Add thyme, Worcestershire sauce, ketchup, pepper and salt (to taste) and cook everything for 2-3 minutes.
  4. Drain cooked potatoes, add milk, parmesan cheese, and eggs and then mash until smooth.
  5. In a baking dish layer all the vegetables and then top with potato layer, and bake at 350°F for 35 minutes.
