Recipe: Gingerbread Center Sugar Cookies

These cookies do take a bit of work but not much more than your average cut out cookie. They have a really pleasing shape and the two different tastes make for a fun cookie experience that’s worth whipping up an extra dough for.

Ingredients
  1. Sugar Cookie Dough
  2. 1 cup butter
  3. 1 cup sugar
  4. 1 large egg
  5. 1 teaspoon vanilla extract
  6. 3 cups flour
  7. 2 teaspoons baking powder
  8. 1/2 teaspoon salt
  9. Gingerbread Dough
  10. 1/2 cup butter, softened
  11. 1/2 cup brown sugar
  12. 2/3 cup molasses
  13. 2 eggs
  14. 4 cups all-purpose flour, divided
  15. 1/2 teaspoon baking soda
  16. 1/2 teaspoon salt
  17. 1/2 teaspoon ground allspice
  18. 1/2 teaspoon ground cloves
  19. 1/2 teaspoon ground cinnamon
  20. 1/2 teaspoon ground ginger
Instructions
  1. Start by making the sugar dough: In a mixing bowl cream together the sugar and butter until fluffy.
  2. To the mixture add the egg and vanilla extract.
  3. Slowly add in the flour, baking powder, and salt and mix gently until incorporated and dough forms with a spatula.
  4. Wrap the cookie dough in plastic wrap and refrigerate for at least an hour.
  5. Next make the gingerbread dough: In a mixing bowl, cream together the butter and brown sugar until smooth.
  6. Stir in the molasses and eggs.
  7. Add to that the flour, baking soda, salt, allspice, cloves, cinnamon, and ginger and beat in to the molasses mixture until a stiff dough forms.
  8. Wrap in plastic and chill for 20-30 minutes.
  9. Assembling the cookies: Roll both doughs out on a floured surface until dough is about 1/8" thickness. Use a round cookie cutter or the mouth of a glass to cut circles out of the sugar cookie dough. Then use the shaped cookie cutter inside of the circle. Place the circles with cut out shapes on a parchment lined baking sheet.
  10. Use the shaped cookie cutter on the gingerbread dough and place the shape inside of the cut out sugar cookie.
  11. Continue assembling cookies until you run out of dough.
  12. Bake at 350ºF for 8-10 minutes.
