Recipe: Goat Cheese and Spinach Croquette

I have this desire to make croquettes but they never come out exactly like I want them too. I liked these but I didn’t love them but if you are looking for a way to make mashed potatoes a little more interesting this is a great way to do it. I think they’d be better fried but they’re good baked.

Ingredients
  1. 75g frozen spinach, thawed
  2. 2 eggs, lightly whisked
  3. 90g flour
  4. 125g breadcrumbs
  5. 1 tsp paprika
  6. 500g leftover mashed potato, chilled
  7. 100g goat cheese
Instructions
  1. Preheat the oven to 200°C and line a baking sheet with foil.
  2. Make a dredging station: the first one flour with paprika, the second bowl egg, and in the third breadcrumbs
  3. In a large bowl mix together mashed potatoes, spinach, and goat cheese.
  4. Take a tablespoon of mashed potato mixture and shape into a cylinder (or shape of your choice).
  5. Dip the croquette into the flour, then into the egg, and finally into the breadcrumbs and place on the baking tray and repeat until all of the mixture is used.
  6. Bake for 15-20 minutes until crisp.
