Recipe: Grilled Halloumi Salad

This easy salad is perfect for a side dish, first course, or even a main dish when paired with some bread or other small dishes. It comes together really quickly and is really flavorful with just a few ingredients.

Ingredients
  1. 1 red onion, finely chopped
  2. 2-3 large tomatoes, chopped
  3. 1 lemon, juiced
  4. 1 handful mint leaves, diced
  5. 1 handful basil leaves, diced
  6. 2 tsp balsamic vinegar
  7. 1/2 tsp smoked dried pepper (you can use any type you like)
  8. 2 tbsp olive oil
  9. 100g halloumi, cut in to 1/2" slices
  10. salt and pepper to taste
Instructions
  1. Prepare the base of the salad by combining the onion and tomato together.
  2. To that add lemon juice, mint, basil, vinegar, and dried pepper and set aside.
  3. Heat the olive oil in a pan and once hot add the halloumi slices, cooking on both side until brown.
  4. Add the halloumi to the vegetable mix, toss and season with salt and pepper to taste.
