Recipe: Homemade Spaghettios with Meatballs

This is a delicious change from soup and a nice throwback to a lot of peoples childhoods. I haven’t had Spaghettios in probably over a decade and I’ve never eaten the one with meatballs but I can almost assure you this one is way more delicious than the one in a can and honestly, very easy to make! You can sub in any type of meatballs or leave them out for a vegetarian version.

Homemade Spaghettios with Meatballs
Serves 6
  1. 28 ounces of tomato puree
  2. 2 cups chicken broth
  3. 1 teaspoon onion powder
  4. 1 teaspoon garlic powder
  5. 1/2 teaspoon each: cayenne, chili powder, salt, pepper
  6. 1 1/2 tablespoons balsamic vinegar
  7. 1 cup milk
  8. 1 cups water (start with 1, add to adjust to consistency)
  9. 1/2 lb cooked mini meatballs (homemade or store bought ones cut in quarters)
  10. 8 ounces ring shaped pasta
  11. 6oz shredded cheese shredded
  1. Heat a large stock pot or dutch oven over medium heat and add the puree, broth, and all seasonings. Once those ingredients have combined, add the tomato puree to the mixture and bring the soup to a boil.
  2. Lower the heat down to a simmer add the milk, water, meatballs and noodles to the soup and cook until noodles are tender, stirring occasionally.
  3. Once noodles are cooked, turn the heat off and add the cheese, mix to melt then adjust the thickness of the soup by adding water if needed.
