Recipe: Lemon Chicken Soup with Couscous

This is a very basic, easy soup with pearl couscous instead of noodles if you’re a person who loves to eat soup but maybe doesn’t want to slurp up noodles sometimes.

Lemon Chicken Soup with Couscous
Serves 4
  1. 1 cup Israeli Cous Cous
  2. 2 tablespoons olive oil
  3. 1 large onion, finely chopped
  4. 2 large garlic cloves, finely chopped
  5. 3 celery stalks, chopped
  6. 2 carrots, diced
  7. 1 zucchini, diced
  8. 8 cups chicken broth
  9. 2 cups diced cooked chicken
  10. fresh juice of 1 lemon
  11. 2 teaspoons grated lemon zest
  1. In a medium sauce pan, prepare cous cous and directed. When complete, set a aside.
  2. In a stockpot or other large pot, heat oil then add garlic and onion until onion is clear then add celery, carrots, and zucchini and sauté until vegetables are tender.
  3. Add 8 cups broth and bring soup to a boil. Reduce heat to simmer to for about 20 minutes.
  4. Add the cooked chicken, lemon juice, lemon zest and cous cous into soup and let simmer for 5 minutes, season to taste with salt and pepper.
