Recipe: Loaded Chickpea Salad

This no-cook salad is really perfect for hot summer months or lazy days when you feel like you need to get more protein and vegetables in your life but you don’t want to put in much effort. It’s basically a one step recipe (two steps if you count chopping everything up as a step) so I hesitated on posting it but it’s just such a good mix of food I figured it was worth it.

Loaded Chickpea Salad

Ingredients
  1. 1 avocado, diced
  2. 1 can chickpeas, drained
  3. 1 small red onion, diced
  4. 250g cherry tomatoes, quartered
  5. 1 large cucumber, diced
  6. 1 bell pepper, diced
  7. 3-4 tablespoons olive oil
  8. 2 tablespoons balsamic vinegar
  9. 1/2 teaspoon cumin
  10. salt, pepper, dill, parsley
  11. 1 tsp lemon juice
Instructions
  1. Mix all ingredients together in a large bowl.
  2. Adjust seasoning as needed.
Notes
  1. This tastes better if you make it ahead of time and stays fresh for several days.
