This is such a simple soup but it has wonderful flavor and the yuzu and dashi really bring out the best of the mushroom. I added some chili flakes also for a nice spice, this is basically the perfect fall soup. Mild, comforting, warm with just a little zing.
Makes 3-4 servings
1 cup matsutake mushroom (or any other flavorful mushroom)
8oz tofu (I like firm, you can use silken if you like)
4 stalks green onion, chopped finely
yuzu zest (use lemon or lime zest if you can’t get yuzu)
2 cups dashi (you can make your own or use instant)
1 tbsp sake
2 tsp mirin
2 tsp soy sauce
1/2 tsp salt
- Clean the mushrooms with damp paper towel and cut them into thin slices.
- Bring the dash to just under a boil then lower the heat to medium and add all of the ingredients.
- Simmer for 5 minutes until everything is heated, and adjust seasoning to taste, and serve piping hot.
