Recipe: Mint Brownies

These brownies are just your run of the mill ordinary no-fail brownie with some minty goodness but they’re also super simple to make and come out in the perfect fluffy and cakey manner.

Mint Brownies
Serves 12
  1. 4 large eggs
  2. 1 cup sugar, sifted
  3. 1 cup brown sugar, sifted
  4. 8 ounces melted butter
  5. 1 cup cocoa
  6. 1 square of melted semi-sweet chocolate
  7. 1 teaspoons vanilla extract
  8. 2 teaspoons peppermint extract
  9. 1/2 cup flour
  10. 1/2 teaspoon salt
  1. Preheat the oven to 300 degrees and butter/flour an 8x8 pan.
  2. Beat the eggs and two sugars together until fluffy.
  3. Add the rest of the ingredients and beat until completely mixed.
  4. Pour the batter into the pan and let back for 45 minutes.
  5. Check for doneness by inserting a toothpick in the center, if clean then it's done.
  6. Cut after the brownies have cooled to the touch.
  1. One of the most important things about brownies is not cutting into them until they've completely cool. If you cut them before this point they're likely to crumb apart and dry out on the edges. Waiting until they're cool will make sure you get nice clean cuts on your brownies - no matter how hard it is to resist piping hot brownies!
