Recipe: One Pot Mac and Cheese

This recipe takes about 20 minutes to come together and tastes much more wonderful than a certain blue box. Since it’s one pot and doesn’t require that you boil the pasta ahead of time it’s easy enough to suddenly decide to make this dish. It can be a side or you can add some cooked spinach, peas, or squash to make it the star of a meal.

One Pot Mac and Cheese
Serves 4
  1. 2 cups elbow macaroni, uncooked
  2. 2 cups low fat milk
  3. 1/2 tablespoon butter
  4. 1/2 teaspoon ground mustard
  5. 1 teaspoon kosher salt
  6. 1/4 tsp nutmeg
  7. 1/4 tsp paprika
  8. 1 cup cheddar cheese (or a mix of cheeses)
  9. black pepper to taste
  1. Put all the ingredients except for the cheese in a pot in the stove.
  2. Cook the mixture over medium and do not leave the stove. Once it starts to simmer turn the heat down to low to finish cooking (about 10-15 minutes until milk is completely absorbed).
  3. If the macaroni isn't fully cooked at this point add more milk and continue to cook (I add a small amount, maybe 1/8c heavy cream at this point and let it cook another 3 minutes).
  4. Take off the heat, stir in the cheese and let it sit for 5 minutes then mix one final time before serving.
