Recipe: Orange and Fennel Salad

Just a perfect quick winter salad that uses just a few ingredients. You can add some balsamic or other herbs if you’re feeling like it. Also I used almonds but feel free to use any nut you like. The nice part about salad is that it’s less a recipe and more like a suggestion list. Also I know they look like grapefruit but I used cara cara oranges which have a more pink toned flesh.

Orange and Fennel Salad
Serves 4
  1. 1 lemon, zest and juiced
  2. one small bunch of fresh dill, roughly chopped
  3. 3 tablespoons extra-virgin olive oil
  4. 1 orange, juiced
  5. 1/3 cup sliced almonds
  6. 2 oranges, thinly sliced
  7. 4 cups mixed greens
  8. 1 fennel bulb, sliced thin
  1. Mix together the lemon zest and juice, herbs, olive oil, and juice of the orange for the dressing.
  2. Place the other ingredients in a bowl, toss, and add dressing as desired.
