This is just a very easy and basic recipe. These vegetables can be used in a variety of ways everything from topping burritos and bean bowls to a side dish or a welcome addition to a salad.
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 zucchini, sliced
- 2 tomatoes
- 2 tablespoons homemade taco seasoning (my recipe here)
- 1 tablespoon olive oil
- Preheat oven to 425°F. Line a sheet pan with aluminum foil. Place all the vegetables on the foil in a single layer. Drizzle vegetables with olive oil and then sprinkle the seasoning on top. Rotate vegetables to coat with oil and seasoning and bake for about 20-25 minutes.
