Recipe: Oven Roasted Fajita Vegetables

This is just a very easy and basic recipe. These vegetables can be used in a variety of ways everything from topping burritos and bean bowls to a side dish or a welcome addition to a salad.

Oven Roasted Fajita Vegetables
Serves 4
  1. 1 red bell pepper, sliced
  2. 1 green bell pepper, sliced
  3. 1 onion, sliced
  4. 1 zucchini, sliced
  5. 2 tomatoes
  6. 2 tablespoons homemade taco seasoning (my recipe here)
  7. 1 tablespoon olive oil
  1. Preheat oven to 425°F. Line a sheet pan with aluminum foil. Place all the vegetables on the foil in a single layer. Drizzle vegetables with olive oil and then sprinkle the seasoning on top. Rotate vegetables to coat with oil and seasoning and bake for about 20-25 minutes.
