Recipe: Pancakes

A super basic pancake recipe where the batter take just a minute or two to come together with things you probably have hanging around the house on any morning that you find yourself in need of a little bread that is kind of also cake-like.

Serves 2
  1. 1 1/2 cups (190 g) all-purpose flour
  2. 3 1/2 (17g) teaspoons baking powder
  3. 1 (5g) teaspoon salt
  4. 1 (15g) tablespoon white sugar
  5. 1 1/4 cups (300ml) milk
  6. 1 egg
  7. 3 tablespoons (43g) butter, melted
  1. In a large bowl, mix together the flour, baking powder, salt and sugar then make a well in the center and pour in the milk, egg and butter and stir until mixed.
  2. Over medium heat, melt butter in a frying pan and once hot, pour about 1/4-1/3 cup batter in to the pan.
  3. Flip when sides have stiffened and bubbles begin to form in the batter.
  4. Brown the other side for about 2-4 minutes and repeat until all batter is used.
